Juniperus Communis

The mountain ranges of the Central and Southern Black Forest, as well as the neighboring Swabian Mountains, are still home to numerous heathlands dotted with age-old juniper trees. Which is why juniper berries have always been used to give aroma to the famous Black Forest ham. Before being smoked, the entire ham is marinated in a juniper berry paste whose fine aromas are absorbed into the meat. For Montgomery Collins, the man who had made his home in the Black Forest, therefore, the path to producing gin was an extremely short one. To create Monkey 47, however, we must venture further afield, as we use only selected, fully ripened berries from Tuscany with whose sun-blessed aroma our native juniper berries cannot compete.
